Shannon Lee Moncure 2/15/17
Our dearest Shannon left this earth early Wednesday morning after a difficult struggle with stage 4 breast cancer. We celebrate the joy she brought to family and friends, and the positive impacts she made on the world around her. Her hallmark qualities of caring for the misfits and the underdogs of the world, and championing the advancement of knowledge for the benefit of all, will be cherished in our hearts always. Her spirit continues on in every person and creature she has nurtured along her journey.
Shannon was born in Lincoln on July 4, 1970. She graduated from North Texas University with a bachelor’s degree in Elementary Education, and a master’s degree from University of Texas at Dallas, in Science Education. At her passing she was midway through a PhD program at UNL in Natural Resource Sciences with a specialization in Human Dimensions. Shannon had an intense calling to environmental, sustainable agriculture, and animal rights causes. Her research interests centered on motivational factors that cause people to participate in local food and sustainable agriculture. She consulted on several research projects involving the local food movement. Shannon was a superior scholar and received countless awards and recognitions, among them the UNL Chancellor’s Fellowship, the Holling Teaching award, and she was a Fulbright Scholarship nominee. Shannon had several research articles published of which she was very proud.
Within the community, she was a founding board member and past president of Nebraska Food Cooperative. Shannon co-owned Green School Farms with her husband. She served on the advisory board for SARE’s Professional Development Program, and volunteered for Wachiska Audubon Society.
Shannon dearly loved animals, as evidenced by her caring for more than a dozen cats, dogs, and other animals during her life, many of which she personally rescued herself. None were more precious to her than her sweet kitties.
